Cilantro Lime Shrimp
As the temperature rises, that only means one thing — It’s grilling season! There’s nothing better than getting friends together and grilling. I love making kabobs, and you could say my love for these cilantro lime shrimp is pretty similar.

- 1-2 limes, juiced
- ¼ tsp crushed red peppers
- 3 tsp garlic, minced
- 2-3 tsp fresh ginger, grated
- ¼ tsp sea salt
- ¼ tsp pepper
- ¼ cup fresh cilantro, coarsely chopped
- 1-2 tbsp avocado oil
- 2 lbs shrimp, divided and peeled
Squeeze the lime juice into a bowl. Then whisk in red pepper, garlic, ginger, sea salt, black pepper, fresh cilantro, and avocado oil. Soak a handful of skewers.
Place peeled shrimp in a shallow dish. Pour Cilantro Lime marinade over the shrimp and allow it to marinate for 20-30. Place 5-6 shrimp, depending on size, on pre-soaked skewers. Place on a large plate.
When ready, grill shrimp to perfection and enjoy it as a taco or with a side of rice and beans.
