Double Chocolate Blender Muffins

Ingredients
  

  • 2 medium bananas, roughly 1 cup, mashed
  • ½ cup gluten-free whole grain oats
  • 2 eggs
  • 1 tsp vanilla
  • ½ tsp baking soda
  • 1 cup almond butter
  • 1 tbsp cacao powder
  • 3 tbsp coconut syrup, maple syrup works too
  • ½ cup chocolate chips
  • ¼ cup blueberries for topping

Method
 

  1. Preheat the oven to 400 degrees. Line 12 cup muffin tin and set aside.
  2. Place all the ingredients except the chocolate chips and blueberries in a high-speed blender. Blend until a smooth thick batter-like consistency is reached.
  3. Gently fold in chocolate chips. Pour evenly into the prepared muffin tin and top with 2-3 blueberries.
  4. Bake for 12-ish minutes or until a toothpick inserted comes out clean.
  5. Allow to cool for 5-10 minutes and enjoy a few warm, and store the rest in the fridge for the week.
