I even went as far as food prepping! Nothing crazy, but I made a few slice and bake cookies! While the rest of the world goes crazy for Pumpkin Spiced latte I’m over here devouring pumpkin bread! Again, this is something I’ve always made from scratch, but like I said mama doesn’t have time for that. Anyway, I’m sharing my pumpkin bread mom hack — Libby’s® Pumpkin Bread Kit! For more than 80 years, LIBBY’s Pumpkin has been part of American baking tradition. Its natural goodness brings flavor, color and moistness to this bread.
Trust me, NO one will be able to tell the difference. This kit is magical. It makes 2 loaves, 72 muffins, etc. Plus, it easily customizable …. hence ‘mom hack.’ When work schedules and school activities keep everyone busy, but it’s always good to have something delicious on hand.
So how did I create pumpkin bread the entire family will like? Easy!
You’ll need:
13×9 greased pan
1 Libby’s® Pumpkin Bread Kit!
4 eggs
1 cup water
1/2 vegetable oil [I prefer avocado oil]
1 cup NESTLÉ® TOLL HOUSE® Semi-Sweet Chocolate Morsels
1 cup walnuts or pecans
Pre heat oven to 350 degrees.
Mix all the ingredients and spread evenly in 13×9 pan. Bake per directions on box.
Cool and top with icing.
