Sweets are definitely a weakness of mine whether it’s ice cream, cookies or brownies I don’t discriminate. Naturally when Influentser sent yours truly a coupon to test a Earth Balance spread I knew I had to pick up some PB and make cookies. Good thing I’m breast feeding and don’t really have to worry about the calories when I eat five cookies in a day! Yup, I went there.
Previously I had never tried any Earth Balance products. I was unsure as it’s marketed as “vegan.” To my surprise the pb was pretty amazing — rich, creamy and super smooth. The agave added a nice sweetness without losing the peanut butter flavor or texture. Overall, I would potentially purchase again especially if it’s on sale.
Pros:
- Sweetened with agave
- Vegan
- No GMOS
- Smooth and creamy
- The added flaxseed doesn’t change taste or consistency
- Price — A 16 oz jar at my supermarket runs $6.39. If you’re like me you’ll go through it in a week. That’s a bit much.
Earth balance offers a number of nut butters and next time I’m definitely going to pick up a jar of coconut peanut butter!
Now for the good stuff — cookies! I whipped these up in less than an hour.
Peanut Butter Cookies
via Joy of Cooking
Preheat oven to 375. Grease or line cookie sheet.
Whisk together:
1 1/2 Flour
1/2 tsp baking soda
Beat in a large bowl until well blended.
1/3 cup butter
1/2 cup sugar
1/2 cup packed brown sugar
Beat in:
1 large egg
1 cup creamy Earth Balance Peanut Butter
1/2 tsp vanilla
Stir in the flour mixture until blended. Shape into 1-inch balls and arrange about 2 inches apart on a cookie sheet. Press flat with a fork and bake about 10-12 minutes. let stand briefly, then remove to a rack to cool. Makes about 60 cookies!

I've never tried Earth Balance, but I would honestly give it a try after reading your review. I thought it had all sorts of weird stuff in it, but it sounds like its totally up my alley!

I love Earth Balance but I don't see any point of anything besides peanuts in my peanut butter.
