Oh, fall — Let me count the ways I love you. Other than all things apples and pumpkins, tailgating screams Fall. Ok, maybe it’s just the football fan in me, but either way tailgating is definitely a fall thing. Plus, it’s full of food. Food that tastes delicious, but probably isn’t good for you.
If I know I’m tailgating or attending a Sunday BBQ, to watch football, I like to start my day off with a healthy, balanced meal. Typically full of veggies and fruit.

Yesterday was MNF and after getting home from Crossfit I really didn’t feel like making anything big. So naturally I whipped up breakfast for dinner. Have I told you how I LOVE breakfast for dinner? Well, I do. I actually made a black bean fried egg sandwich!
Black Bean Breakfast Sandwich
Serves 1
Ingredients
1 Spicy Black Bean Burger [MorningStar Farms]
1 egg
1 small handful of spinach
1 slice swiss cheese
1/4 medium Avocado
1/4 cup pepproncini [dried; I like a lot]
1 wheat bun
Mustard to taste [I prefer yellow]
Salt + Pepper to taste
Directions
Place thawed burger in a non-stick frying pan and cook over medium heat for 6-7 minutes, turning burger frequently.
Meanwhile, heat another frying pan over medium heat. Make sure to spray with cooking spray. Begin to fry your egg, add a a pinch of salt and pepper.
Start to assemble your bun — pepperoncini’s, mustard, avocado, etc. If you want your cheese melted add to the burger around 5/6 minutes and cover. Don’t forget to check your egg. Once cheese is melted place burger on bun. Next up your egg should be ready — top burger with egg [I like it over medium]. Finish off with spinach and enjoy!
Additional Toppings to try: onions, tomatoes, bacon,etc.
