I’m taking a short break from all things Christmas related to talk about some serious stuff, football + food! Yup, serious stuff. Sunday is football. When I think of football Sunday, I think of tailgating, barbecues and tasty [not-so-good for you] food. Game day food usually isn’t the healthiest, but today I’m sharing a dish that won’t leave you feeling guilty afterwards, BBQ Chicken + Brussel Sprout salad!
Last weekend, while shopping at Safeway I picked up my go-to always fresh Foster Farms Fresh & Natural Chicken and Stubb’s chicken marinade. We LOVE Stubb’s BBQ sauce and marinades! Other than homemade it’s the only BBQ sauce and marinade we buy — one because it tastes good and two because it’s free of high-frustose corn syrup!
Here’s the thing, you can’t just eat chicken! I’m a big fan of salads and with brussels sprout in season I figured it would make the perfect side dish. The salad it super easy to make. Making ahead allows for more football watching. Don’t worry it won’t become soggy which also means it’s a great side dish for tailgating! #winning.
Brussel Sprout, Cranberry and Quinoa Salad
via gimme some oven
[serves 4-6]
Ingredients
1 lbs brussel sprouts, ends trimmed then halted and thinly sliced
2 cups cooked quinoa
1 cup dried cranberries
2/3 cups chopped pecans, toasted
orange vinaigrette
-1/2 cup orange juice
– 1/2 olive oil
– 2 tbsp apple cider vinegar
– salt & pepper to taste
Directions
Salad: Toss all the ingredients until combined.
Vinaigrette: Whisk ingredients until combined. Pour over salad and toss until coated.
Serve with your favorite BBQ chicken and enjoy!

Mmmmm…. that sounds like a delicious bottle of marinade and it's great that there's no corn syrup. I swear it's becoming hard to find anything without corn syrup these days :S
