I’m just trying to be a cool mom… here’s our #snowy #laketahoe version. 

No need for ages because look at all that snow! 🎿✌🏻🙈
One of my favorite things to make with ripe banana One of my favorite things to make with ripe bananas are these gluten-free collagen muffins!  They’re also kid tested and mom approved 😉 

Happy baking!

Ingredients 

2 medium bananas, roughly 1 cup, mashed
½ cup gluten-free whole grain oats
2 eggs
1 tsp vanilla
½ tsp baking soda
1 cup almond butter
1 tbsp cacao powder 
1-2 scoops @bubsnaturals collagen powder 
3 tbsp maple syrup 
½ cup chocolate chips 

Directions 

Preheat the oven to 400 degrees. Line 12 cup muffin tin and set aside. 

Place all the ingredients except the chocolate chips  in a high-speed blender. Blend until a smooth thick batter-like consistency is reached.

Pour evenly into the prepared muffin tin and top with chocolate chips.

Bake for 12-ish minutes or until a toothpick inserted comes out clean. 

Allow to cool for 5-10 minutes and enjoy a few warm, and store the rest in the fridge for the week.

Couple hours of powder, low visibility and cold temps, but we got out there.

While the snow removal seems endless…. we’re making sure to get in some fun! Tons of skiing and snow play! 

Zero work was done today and I’m ok with that!
Mother Nature keeps delivering! The pass was close Mother Nature keeps delivering! The pass was closed to Kirkwood so instead of skiing we went for a snowy walk.

It was also the tiny skiers first day of JETs for the season. She skied hard and the stoke was real. It’s going to be another epic season.

How to Grow Alfalfa Sprouts

Ever wonder if you could grow your own sprouts? I have and with a quick search on pinterest you’ll find a handful of “how to” pins. I’ve probably even pinned one along the way. 

It’s actually easier than I thought! All you need is a sprouting jar lid, wide mouth mason jar, High Mowing sprouting seeds, some water, and a few days. Northern California’s Whole Foods Market recently started carrying High Mowing Organic Sprouted Seeds ($5.49/ 4 oz. bag) and I was lucky enough to test their Alfalfa and Ancient Eastern Blend seeds. 

About High Mowing Organic Sprouted Seeds:

Organic
seeds for snacking or planting. If planted, sprouted seeds require little
maintenance and water so they are great for small urban apartments or busy
families. With the “safe seed pledge,” High Mowing commits to
supporting agricultural progress that leads to healthier soils, agriculturally
diverse ecosystems and healthy people and communities.




How to Grow Alfalfa Seeds:

  1. In a wide mouth mason jar soak two tablespoons of Alfalfa seeds in two cups of waters. Let it sit for 8-12 hours.
  2. Drain and rinse a few times. Place jar in a bowl, tilted at an angle so any excess water drains out (Note: Sprouts should be moist, not sitting in water). Cover with a hand towel. Repeat every 8-12 hours for four days.
  3. After a day or two you will begin to see sprouts! On day five the sprouts are ready for greening. Next place the jar in indirect light. They will turn green over the course of a day.
  4. Now they are ready to enjoy. Store in an airtight
    container. The sprouts will last up to one week in the refrigerator.

Now the big question. How did I enjoy my sprouts? On everything! I actually don’t eat bread so my meals were a bit creative. 

On the left I paired my sprouts with sweet potatoes, avocado, hummus and an egg over medium. On the right was an amazing salad topped with grilled chicken, avocado, hummus, sunflower seeds and SPROUTS! Apparently I was on a avo + hummus kick last week. The sprouts added just the right touch to each dish. How would you enjoy your sprouts?

    I NEED to do this!!!!! I have never seen these at the whole foods by me… I love sprouts on EVERYTHING so this would be so fun to do!!

    how cool!! they grow in only a day or two?? i think there are plenty of ways to eat your sprouts and not just on your sandwich alone

      It takes about 4-5 days from start to finish. I'm already on my second batch:)

The year brought personal & business growth, adventure and a lot of FITNESS.

I’m ready to turn the page and make 2023 even more memorable! I have big goals! It’s time to get to work!
