During the week I typically stick to quick easy breakfast food, cue green smoothies. However, when the weekend rolls around I love whipping up eggs and toast with avocado, french toast, pancakes, etc. When Del Real asked a few bloggers to come up with a few recipes for their contest I jumped at the chance. This is my first real recipe challenge.
Initially I decided to make breakfast tacos, but my mom took it one step further and suggested a breakfast quesadilla! Now that’s thinking out of the box.
I’m not going to lie there is nothing healthy about this breakfast, but it sure is tasty. My college self would be in heaven…. You can vote for my recipe HERE.
Carnitas Breakfast Quesadilla
Serves 6
Ingredients
1 Package Carnitas
6 Eggs
1 tbsp Almond Milk
2 cups Mexican blend cheese
butter
1/4 tsp Salt
1/4 tsp Pepper
Flour tortilla
sour cream
guacamole
salsa/ pico de gallo
Directions
Beat eggs, almond milk, salt and pepper in bowl until blended.
Heat butter in large nonstick skillet over medium heat until hot. Pour in egg mixture. As eggs begin to set, gently pull the eggs across the pan with an inverted turner, forming large soft curds.
In the meantime heat Carnitas.
Continue cooking eggs – pulling, lifting and folding eggs – until thickened and no visible liquid egg remains. Do not stir constantly. Add meat and stir to combine. Remove from heat and set aside.
In a heavy skillet, heat 1 tablespoon butter.
Assemble flour tortilla. Spread shredded cheese on the tortilla and top with egg/meat mixture and salsa. Sprinkle additional cheese and fold the tortilla in half. Place in skillet. When the bottom tortilla half is lightly brown and cheese has started to melt, flip quesadilla and cook on the opposite side. Remove quesadilla from skillet and cut into quarters. Repeat with remaining ingredients. Top quesadillas with guacamole, sour cream and pico de gallo.
