Sunday might have been a lazy day, but I did manage to do some cooking… paleo of course. I’ve been cooking my way through Paleo Comfort Foods and have loved everything so far. This week I made some muffins to last us through the week. They are super moist and yummy. Enjoy.
Morning Glory Muffins
Ingredients
2 1/2 cups almond flour
1 tablespoon cinnamon
2 teaspoons baking soda
1/2 teaspoon salt
2 cups carrots, grated
1 large apple, peeled, cored and grated
1 cup shredded coconut
1 cup raisins or dates
3 large eggs
2 tablespoons honey or agave nectar (optional)
1/2 cup coconut oil or avocado oil
1 teaspoon vanilla extract
Directions
Preheat oven to 350 and grease a standard-sized muffin pan (12 cups)
Combine almond flour, cinnamon, baking soda, and salt in a large bowl. Add carrot, apple, coconut and raisins and combine well.
In a separate bowl, whisk eggs, honey, oil and vanilla extract together.
Pour this mixture over your dry ingredients and mix well. This batter will be very thick.
Spoon into muffin pan and place on middle or upper rack of your oven for 40-50 minutes for large muffins, 20-30 minutes for smaller muffins.
When a toothpick comes out clean they are done.
Cool muffins in pan for 8-10 minutes and then remove to a rack to finish cooling.

I picked it up from the bulk section at my local health food store. But our chain store carries the Bob's Red Mill brand (organic section). You can always purchase it online. Amazon had 20 pages of results — crazy! Good luck.
