Good morning friends!
Today I have a tasty cookie recipe straight from grandma Jo!
Even if you don’t like dates you’ll love these cookies.
Enjoy!
Cookie Dough
Mix together the following ingredients
1 cup butter
1 cup white sugar
1 cup brown sugar
3 eggs
4 cups flour
1 teaspoon baking soda
1 teaspoon cinnamon
1/4 teaspoon salt
Filling mixture
Cook the following until soft (about 15 minutes) then mash
1 lb. dates
1/2 cup sugar
1/2 cup water – maybe 3/4 if dates are really dry
Once cooled add the following ingredients
1 cup walnuts – chopped
1 teaspoon vanilla
Preheat oven to 350 degrees
Roll small pieces of dough in hand & flatten with bottom of glass (dip glass in powdered sugar)
Place on cookie sheet
Add teaspoon of date filling
Place a tiny piece of dough on top, press and seal
Bake at 350 degrees for 10 minutes
They burn easy so when they turn light brown remove from oven.
