There’s just something about your grandmother’s cooking and in Nick’s case his grandmother’s baking. Last Christmas I experienced it first hand. One word — AMAZING! While we were in Mexico I asked Nick’s mom if she could mail me grandma Jo’s recipes because I have a few ideas for next year… Well they arrived at our house last week. Needless to say I was busy baking a few over the weekend. I hope you enjoy these as much as we do.

Mix graham cracker crumbs, butter and power sugar in a food processor. Mix well. Press the mixture into a greased 9×13-inch pan. Bake about 10 minutes
Whisk together sweetened condensed milk and vanilla. Pour the filling over graham cracker crust, sprinkle coconut and bake 10 to 12 minutes. When edges start to brown take out of oven.
