I love ice cream. I know it’s hard to believe, right? Saturday I was feeling like a tasty treat so I figured why not make some ice cream. Plus, it was time to break in my kitchen aid ice cream attachment. I made a delicious paleo green tea ice cream. It turned out fantastic. I even topped it with some dark chocolate. It’s light and perfect for any warm summer day.
Green Tea Ice Cream

Ingredients
14 oz can light coconut milk (I use the Trader Joe’s brand. Use full fat to make it a bit creamier)
2 tsp matcha green tea powder (Add 1 more tsp for stronger flavor)
1 cup unsweetened almond milk
2 tbsp sugar
Directions
Combine all ingredients in a blender (I use the Vitamix 300) and mix until smooth. Transfer ice cream mixture to a bowl and cover with plastic
wrap. Place in the freezer and chill until cold, at least 30 minutes.
Using your ice cream maker, process the chilled ice cream mixture about 20 minutes. (I use the Kitchen Aid stand mixer attachment)
Place the ice cream into an air tight container. Freeze until firm, at least 30-45 minutes.

It's easier than I thought it would be! I haven't bought bread or dairy in five months! I do bend the rules when I'm out, but over all we're paleo about 95% of the time and have seen great results overall. I suggest starting with Whole 30 and going from there.
