I’m just trying to be a cool mom… here’s our #snowy #laketahoe version. 

No need for ages because look at all that snow! 🎿✌🏻🙈
One of my favorite things to make with ripe banana One of my favorite things to make with ripe bananas are these gluten-free collagen muffins!  They’re also kid tested and mom approved 😉 

Happy baking!

Ingredients 

2 medium bananas, roughly 1 cup, mashed
½ cup gluten-free whole grain oats
2 eggs
1 tsp vanilla
½ tsp baking soda
1 cup almond butter
1 tbsp cacao powder 
1-2 scoops @bubsnaturals collagen powder 
3 tbsp maple syrup 
½ cup chocolate chips 

Directions 

Preheat the oven to 400 degrees. Line 12 cup muffin tin and set aside. 

Place all the ingredients except the chocolate chips  in a high-speed blender. Blend until a smooth thick batter-like consistency is reached.

Pour evenly into the prepared muffin tin and top with chocolate chips.

Bake for 12-ish minutes or until a toothpick inserted comes out clean. 

Allow to cool for 5-10 minutes and enjoy a few warm, and store the rest in the fridge for the week.

While the snow removal seems endless…. we’re making sure to get in some fun! Tons of skiing and snow play!

Mother Nature keeps delivering! The pass was close Mother Nature keeps delivering! The pass was closed to Kirkwood so instead of skiing we went for a snowy walk.

It was also the tiny skiers first day of JETs for the season. She skied hard and the stoke was real. It’s going to be another epic season.

Holiday Dinners Made Easy + Whole Foods Market GIVEAWAY!!!

It’s hard to think about Christmas when Thanksgiving was last
week, but we’re 22 days out! Since I’ll be eight months pregnant we’re
staying in Tahoe this year and guess what — we’re hosting Christmas at
our house. I’m already thinking about a menu and can’t wait to start
cooking. I love the idea of making a traditional dinner, but would definitely include a turkey for the non-beef eaters — like me. Whole Foods Market has a number of Holiday recipe guides to pull inspiration from. Here’s our Christmas dinner menu so far. 

Grilled Turkey // Sweet Potato Bacon Bites // Cheddar Popovers 
Sugared Cranberry & Lemon Curd Pie // Greens Beans // Spinach Salad w/ Pear, Walnuts & Goat Cheese 





However, if cooking isn’t your style Whole Foods Market still has you covered. They’re making holiday gatherings easy this season with turkey dinner “in a box” (Roasted Holiday Turkey Breast Meal) and prefixed holiday menus.
There are multiple options, including vegan and vegetarian dinners! Plus, you can order dinners for families of four to eight in the store or
online.

    WHOLE FOODS IS THE LOVE OF MY LIFE!!!! We are getting married in the new year, just currently planning the type of wedding we want to have! We already have the menu set…. 😉 😉
