This is the perfect Sunday night meal prep for the week ahead. It’s simple, delicious and can be enjoyed hot or cold! 

Cherry Baked Oatmeal 

1 1/2 cup almond milk
1 egg
1/2 tsp vanilla
1/2 cup @nowfoodsofficial date sugar
1/2 cup maple syrup
3 1/2 cups @nowfoodsofficial Oats
1/2 tsp ginger
Dash of cinnamon 
1/4 cup sliced almonds 
2 cups cherries (any berries will do)

Preheat oven to 350°F. In a large bowl, whisk together milk, egg, vanilla, date sugar
and maple syrup. Add in oats, ginger, dash of cinnamon, sliced almonds and cherries. Stir to combine. Pour into a greased 8” round dish and bake for 25 minutes.

Enjoy with coconut whipped cream, yogurt, ice cream or extra nut milk! 

P.S. the @nowfoodsofficial date sugar might be my new favorite brown sugar/sugar alternative! Fun fact — It’s actually finely chopped dried dates!

Truth is yesterday was the first day I’ve tracked my food in a LONG time. Like really tracked. I tracked as I went through my day because I wanted to see where I would land. Definitely ate a lot, but could use some more fuel. 

This was a solid day of eats. It was also a rest day. I basically ate what I wanted and needed to fuel my day. 

So what did I eat?

- coffee, creamer + @bubsnaturals collagen 
- @bubsnaturals AVC gummies + @smartypants multivitamin 
- egg scramble w/ potatoes, spinach, guacamole + @delrealfoods salsa verde 
- @cliosnacks yogurt bar 
- chicken wrap w/ a homemade quick pickle 
- @nowfoodsofficial chia seed pudding + @purely_elizabeth granola 
- chicken + roasted veggie salad 
- smoothie: berries, mango banana @truvani vanilla protein, @nowfoodsofficial hulled hemp seeds, cacao powder, @santacruzorganic PB, @dvashorganics date syrup

We’re in full summer mode, but we’re still prepping quick snacks for the week ahead. Today I made some blender muffins and chia seed pudding. 

Want to make some muffins? Blend the following: 

2 medium bananas
½ cup @nowfoodsofficial oats
2 eggs
1 tsp vanilla
½ tsp baking soda
1 cup @santacruzorganic almond butter
1 tbsp cacao powder
3 tbsp maple syrup

Using a 12 cup muffin tin divide the batter. Top with chocolate chips and bake for 12 minutes at 400 degrees!

When you want to get better at something it’s all about consistency. You know putting — in the work over time! I’m not the fastest runner, but I’m working on getting faster.

So here’s a little glimpse of me running 🤗
What a weekend! This was my third @northern_calif What a weekend!

This was my third @northern_california_classic Comp and first one in a new age group. It was a blast! I held my own and had finishes from 5th to 11th! When all was said and done, I placed 11th overall! 

I’m happy with my effort. I pushed myself harder than ever. I was able to do every movement — and those weights were heavy! I’m talking a 100lb D-Ball and 215 lb deadlift! Whew, but I had fun, learned a lot, and can’t wait until next year!

You know what screams summer? SMOOTHIES! Sometim You know what screams summer? SMOOTHIES! 

Sometimes I’ll even make a double batch and make popsicles with the leftovers! If that’s not the best PRO tip I don’t know what it is. 

Right now, I am loving everything berries…. Recently were craving a refreshing afternoon smoothie and whipped up this gem for you. Luckily we were able to pick up all our favorite #OpenNature and #Oorganics products from @safeway.

Summer 🍓🍌 Smoothie 

1½ cups almond milk 
2 cups frozen strawberries
1 medium banana 
½ cup vanilla/plain Greek yogurt 
1 tsp vanilla extract
1 tsp date syrup 

Place all ingredients into a blender and blend until smooth: pour in glasses and enjoy!

Makes 2 servings.

Holiday Dinners Made Easy + Whole Foods Market GIVEAWAY!!!

It’s hard to think about Christmas when Thanksgiving was last
week, but we’re 22 days out! Since I’ll be eight months pregnant we’re
staying in Tahoe this year and guess what — we’re hosting Christmas at
our house. I’m already thinking about a menu and can’t wait to start
cooking. I love the idea of making a traditional dinner, but would definitely include a turkey for the non-beef eaters — like me. Whole Foods Market has a number of Holiday recipe guides to pull inspiration from. Here’s our Christmas dinner menu so far.
