2 ripe bananas
1/2 cup Greek Yogurt, plain
1/4 cup almond milk, unsweetened
2 tsp pure vanilla extract
1 up whole wheat flour
1/4 cup unbleached flour
1/2 cup Bob’s Red Mill Protein & Fiber Nutritional Booster
2 tbsp flax seeds
2 tsp baking powder
1/8 tsp salt
1 cup fresh strawberries, diced
Preheat oven to 350 F.
Spray muffin baking pan with cooking spray and dust with flour. Set aside. You DO NOT want to use muffin liners.
In a medium bowl mash bananas until smooth. Add egg, Greek yogurt, almond milk and pure vanilla extract. Mix with a fork until well combined.
In another bowl add all dry ingredients: whole wheat flour, protein powder, flax seeds, baking powder and salt. Combine dry ingredients. Add dry ingredients to wet ingredients and mix. Do not overtax!
Fold in strawberries.
Use a 1/4 cup to distribute the batter evenly among muffin tin. Bake for 20 minutes. Cool completely before serving.
