Not only do I love experimenting in the kitchen, but I love trying new products. I’ve always wanted to make homemade gummy bears, but that’s for another day. I had to go back to the drawing board on those.
Today I’m sharing a super refreshing treat/snack, Coconut Pineapple Gelatin! Guys, I can’t tell you the last time I had gelatin. Honestly, it was probably as a kid from a jello cup. Nothing wrong with that, but after making gelatin last week I’m already brainstorming new flavors.
Some are likely thinking really? Gelatin? I’m not kidding. Didn’t you hear gelatin will be the cauliflower of 2020? Just kidding, but maybe we should bring it back!? Dr. Martins are making a comeback. Just saying.
Anyway, this was crazy simple and you’ll want to make some stat.
Coconut Pineapple Gelatin
Makes 4
Ingredients
- 12g Great Lake Gelatin Co Unflavored Gelatin
- 1/2 cup cold Pineapple Coconut Water
- 1 1/5 cups hot Pineapple Coconut Water
- Toppings: fresh fruit, coconut whipped cream, coconut flakes + cacao nibs (optional)
Directions
Soften gelatin in 1/2 cup cold liquid and allow to sit for at least 5 minutes. Meanwhile, heat up reminding Pineapple Coconut Water. Please Note: if you use Fresh Pineapple instead it will not congeal.
Dissolve gelatin mixture in hot liquid.
Pour into 4 small ramekins and chill until firm, roughly 1-2 hours. Top with your favorite toppings and enjoy.
