It’s not a secret that I’m a self-proclaimed fitness and health nut. I’m often asked how I stay in shape and what I eat. Today I’m going to show you what I’m really eating for lunch. I know, I’m getting cray-cray over here. Maybe it’s because it finally snowed in Tahoe.
Let’s start with fit goals though. I workout a lot. I’m talking 6-8 times a week over 5-6 days. Plus I really watch what I eat. In order to stay on track, every month I like to set a new goal to work towards. Last month it was 10 unbroken kipping pull-ups which I accomplished with just a few days to spare. This month I’m working on 5 strict pull-ups. In order to reach my goal I know I need to build muscle. This is where what I eat really counts.
It’s doesn’t matter how much you workout fit bodies are made in the kitchen. Today I’m building a better lunch. Hopefully, I’ve inspired you to start thinking about what you’re eating. Especially with the holidays quickly approaching.
5 STEPS TO BUILDING A BETTER LUNCH
1. Plan ahead /Don’t forget to prep the night before
2. Balance your meals
3. Pack healthy snacks
4. Use leftovers
5. Eat more Iron
Quinoa Power Bowl
[Serves one]
Ingredients
1/2 cup Prepared quinoa
1/2 cup roasted veggies [I used broccoli, cauliflower & carrots]
1/4-1/2 Avocado, sliced [depending on the size]
1/2 cup shredded chicken [optional]
1 egg fried [Sometimes I like two eggs 1 yolk]
salsa to taste [optional]
Directions
Layer all the ingredients [in the above order] and enjoy!
