I interrupt your Sunday scrolling to bring you this killer view. Yesterday was a powder day, today another. 🤞🏻 Mother Nature keeps them coming because mama is loving being back on the mountain.

This year I’m practicing what I preach. I definitely would have loved a slow morning at home, but 👋🏻 fresh snow. I told myself it’s still early in the season, there will be more days. But then I said go just go. Boy am I glad I went. No crowds and fresh lines all morning.

The moral? Sometimes you just have to ... you’ll thank yourself later!

Now I’m spending the rest of the day getting ready for the week. 😘

When we renovated our kitchen 5 years ago, I didn’t think about cabinet height vs my height 🤣 I was like, give me a light and bright space and ALL the storage...because 1,500 sq feet! I love my modest house and this space! Even if I need a step stool.

For those curious, I’m a tall five foot three!

Instagram post 18073407964167080 Did you know there are 10 varieties of @usapears? Yeah, neither did I, even though I receive a box of pears for Christmas every year. Aside from poached pears, I've never baked with pears. Crazy, right? With that said,  I decided to bake something quick, simple and delicious with items I had on hand. 
As a result, a gluten-free Cranapple & Pear Crumble was created. It's the perfect example of using what you have on hand and just going for it. 
Crumbles are best enjoyed morning, noon, or night. So don't worry when it's calling your name while pouring your morning cup of coffee. No judgment here.

Yesterday, I played hooky to ski... Yes yours truly, a snowboarder of 20+ years, skied! I skied and I loved it! 
I'm not going to lie, the last few winters have been tough. Heavy snowfall and a loss of love for snowboarding. I would find any reason to not go if it wasn't a powder day. Yesterday challenged me. It made me fall in love with winter again! 
Did I fall? You bet!

Did I laugh? OMG, if you could have seen me. I laughed so hard I almost peed my pants.

Will I go again? Heck yeah! Luckily friends hooked your gal up with a full setup so I can go anytime!

Why am I telling you this? Because we've all encountered a rut or two. Remember it's just a moment in time. You have two choices. You can continue to live in the status quo or you can do something about it.

Skiing yesterday was me doing something about it. Being ok with being uncomfortable. Pushing myself. Living in the moment and never wasting a day!

That’s what I tell myself when things don’t go as planned. Keep smiling this too shall pass. While you can't control everything. You can control how you react. You can keep smiling and pushing forward. 
I was tested as an entrepreneur in ways I never thought this year. While things changed, in the end for the better, I just kept on smiling. I also learned a lot! I'm able to do this because I’ve found what drives me. What truly makes me HAPPY. It’s taken a lot of time and reflection to get to this point. But it's possible if you're willing to put in the work

How is this applied to your health & wellness journey? It doesn’t matter what size you are if you’re not happy on the inside. So before you start cutting, reversing, maintaining, fasting, etc. In the end, to truly be happy you need to work on yourself too.

Better Breakfast Month // Black Bean Omelet

I’m back today with another tasty breakfast. If you’re just tuning in — I teamed up with BistroMD for better breakfast month and have been sharing various recipes from Dr. Cederquist and her husband, Ed Cederquist, created for BistroMD.

Why delay — now is the time to learn how to put a healthier spin on your favorite breakfast options, live a healthier lifestyle and make better breakfast choices.

Aside from waffles, pancakes and crepes my favorite breakfast food is eggs. Eggs are actually a breakfast staple for me — hard boiled, fried, scrambled, quiche or omelet. I’ll take it however I can get it.

Drumroll please….. today’s breakfast is a black been omelet because why not?! If you’ve been reading my blog for awhile then you know I hail from San diego and LOVE Mexican food. Although, I wouldn’t change the recipe below I would enhance it with some fresh pico de gallo and a few slices of avocado.

bistroMD Black Bean Omelet
This delicious breakfast staple gets kicked up a notch with a black bean filling and fresh salsa on top.
Yield’s one serving
What you’ll need:
– 1/2 cup of cage free 100% egg white liquid
– 1/8 teaspoon of extra virgin olive oil
– A pinch of sea salt and black pepper
Directions: 


In a nonstick 8-inch skillet, heat the oil over medium heat. Pour the egg whites into a small bowl and sprinkle in the salt and pepper. Whisk for 10 seconds, add in the egg mixture to the skillet to cover the bottom and cook the eggs for two minutes. Using a rubber spatula, flip the egg over and cook for another two minutes. Transfer to a plate and leave the omelet open.

More ingredients that you’ll need:
– 1/4 cup of canned organic black beans from Whole Foods
– 1/8 teaspoon of extra virgin olive oil
– 1 tablespoon of diced green pepper (1/4″ x 1/4 “)
– 1 tablespoon of diced red pepper (1/4″ x 1/4″)
– 1 teaspoon of dice onions (1/4″ x1/4”)
– 1/8 teaspoon of ground cumin
– 1/8 teaspoon of fresh chopped cilantro
– A pinch of sea salt and black pepper
– 1/4 cup of Mexican shredded cheese


Directions: 
Drain black beans and rinse with cold water. In a skillet, heat the oil over medium heat and add in the onions. Cook until the onions are clear, add in the peppers and cook for another two minutes. Add in the black beans. Continue to cook for another minute and add in the cumin, cilantro and salt and pepper. (The cheese is for the stuffing).

    That omelette looks HEAVENLY! You've got the flip on lock! I always try to make omelettes but it usually turns into scrambled eggs when I try to flip them! LOL

I'm often asked how I do it. How do I maintain? How do I eat all the veggies? How am I so disciplined? etc.

Here's the answer. I found my "why," a food balance, but most importantly I'm consistent. I enjoy the foods I love in moderation. Like these sweet bars of magic. Did I eat one? You bet! I enjoyed every single bite, logged it and moved on! Yup, I'm keeping myself accountable, enjoying the holidays and slaying goals! Is your mind blown?

Tracking macros taught me what food is made of. What I need to fuel my body and achieve goals. Oh, and the ability to eat a "treat" without guilt! There's no need for the all or nothing mentality.
