No more excuses that you don't have time in the morning to eat a tasty, filling, and healthy meal! Not you. This weekend try making yourself some breakfast burritos.

Make a big egg scramble with your favorite veggies and spinach. Wrap it up with a tortilla and some cheese. Then wrap in alumni foil. Yes. In the morning, preheat your oven to 350 and pop in your breakfast burrito 🌯. It should be done, by the time you're ready! 

Want to take it to the next level? Top with guacamole or salsa. 

Want to make more than a week's worth? Double the batch and freeze the rest for up to a month.

Wraps. They're delicious and super easy to make. P Wraps. They're delicious and super easy to make. Plus, anything flys. Honestly, it's the best way to use up leftover grilled chicken.⁣

I'm not kidding. Grab your favorite style wrap, dice up some some chicken, add some mustard (sorry-I don't like mayo), a pickle, avocado, greens and shredded carrots (for crunch). Roll it up. Ta-DA you now have a delicious lunch in less than 10 minutes!⁣

I might even enjoy it with a side of sliced apples or grapes.⁣
⁣

I'm not going to lie, but this dish has been in heavy rotation the last few weeks. It's super basic and takes less than 15 minutes.

🍳eggs (1 yolk) scramble with a handful of spinach, mini heirloom tomatoes, and zucchini. 

🍠 baked sweet potato with @nowfoodsoffical Salted Cashew Butter & a dash of cocoa-cinnamon. 

Prepping items like sweet potatoes at the beginning of the week is key to staying on top of my nutrition. Oh, and don't knock nut butter on sweet potatoes until you try it.

Sometimes we need help setting habits in motion, a reminder, time to reflect, guidance, etc. I like to start my day with a win. I make my bed, take a shower, and enjoy some greens -- Because extra greens never hurt anyone. On Mondays, I do a brain dump. I like brain dumps because it helps set up my week. I know what I have to do and what I need to do. ⁣

In January, I added 𝘛𝘩𝘦 𝘏𝘢𝘣𝘪𝘵 𝘛𝘳𝘪𝘱 as part of my routine. So far, I love it. It's making me think about life, work, etc. from another perspective.⁣

𝗧𝗵𝗲 𝗣𝗮𝘆𝗼𝗳𝗳: amplify the power, peace, and presence that comes with knowing what matters most ⁣

Within the first 20 pages, you'll tackle sleep, food, and fitness. ⁣
⁣
One of the questions asked was: What does the word fit mean to you? How do you define what it looks or feels like? ⁣

We've be getting Emerson on the mountain skiing every chance possible! And it's been amazing 
watching her get more confident with each run. 

At this age, it's all about keeping it fun. So we go with friends. We go when it's warm. We pack snacks. We know when it's time to go. 🎿

How are you keeping your kids active this winter?
If you change one thing this year stop looking at If you change one thing this year stop looking at food as "good" or "bad." Start looking at food as FUEL.

This shift in mindset will not happen overnight and you shouldn't expect it to. You have to work at it. You have to allow yourself to enjoy foods you love without the feeling guilty. Find your balance. Eat real foods and enjoy a homemade cookie!

SUMMER CHICKEN & VEGGIE WRAPS

Makes 4 Wraps

Ingredients 

  • 8 oz grilled chicken tenders, sliced (vegetarian sub: tofu, tempeh or black beans)
  • 1 cup cooked quinoa or brown rice 
  • 8 tbsp cilantro lime dressing
  • ½ yellow bell pepper, sliced, sauteed
  • ½ red onion, sauteed
  • 1 cup spring mix
  • 4 Spinach Garden Wrap
  • Optional: Avocado, hummus, or  tomatoes

Let’s assemble

Evenly divide sauteed bell pepper + onions, spring mix, quinoa/brown rice, and chicken between four large spinach tortillas.

Pro tip: Less is more. Remember you have you roll it into a wrap 😉

Drizzle 2 tbsp of the cilantro-lime dressing into each wrap before rolling them up. Carefully tuck in the sides of each wrap as your roll until ingredients are secured inside. You can secure everything together with a toothpick before cutting in half. Serve with extra cilantro lime dressing! Makes 4-8 serving, 1/2 burrito per person.

This kid is growing up so fast it scares me sometimes. Especially in the world we live in today. I hope she remains adventurous, grounded and kind hearted.
I LOVE oatmeal -- overnight oats, fully loaded oat I LOVE oatmeal -- overnight oats, fully loaded oats, oat bars, oatmeal cookies or even adding oats to my smoothie! Oats are a nutrition powerhouse with some major health benefits (Heart Health, Blood Sugar Control,  and Digestive Health). Plus, it's a great way to get in some extra carbs. ⁣
⁣
One bite and you'll be hooked.⁣
⁣
𝗧𝗵𝗲 𝗨𝗹𝘁𝗶𝗺𝗮𝘁𝗲 𝗢𝗮𝘁𝗺𝗲𝗮𝗹 𝗕𝗮𝗿⁣
⁣
Ingredients⁣
1/2 cup unsalted butter⁣
1 cups natural creamy PB⁣
1 3/4 brown sugar, firmly packed⁣
2 tsp vanilla⁣
2 tsp baking soda⁣
3/4 tsp salt⁣
1 1/2 tsp cinnamon ⁣
3 1/3 rolled oats (I used half muesli & half oats)⁣
⁣
Optional add-ins:⁣
1 cup crasins⁣
1 cup mini chocolate chips⁣
1 cup coconut flakes⁣
1 cup nuts (walnuts, pecans or sliced almonds)⁣
⁣
Directions⁣
⁣
Preheat oven to 350 degrees. Lightly grease a 9x13 baking dish and set aside.⁣
⁣
Place butter, PB, sugar, and vanilla in a stand mixer and combine until smooth. You may need to occasionally scrap down the sides.⁣
⁣
In a separate bowl combine remaining ingredients. Combine PB and oat mixture. It will be VERY thick. Use a wood spoon or your stand mixer on low.⁣
⁣
Once combine, fold in "optional" items. Pour into prepared pan. Spread evenly.⁣
⁣
Bake for 20-25 minutes or until the bars are slightly brown along the edges. ⁣
⁣
Cool completely; cut into bars. ⁣
⁣
PRO TIP: Enjoy some now and freeze half for later.⁣
⁣
Makes roughly 24 bars. ⁣
⁣
