Are you team pancakes or waffles? Me too! It totally depends on the day, but lately I’ve been loving pancakes. These are hands down the best blueberry protein pancakes. They are super easy to make, keep for a few days in the fridge, and are totally kid approved. I don’t know what else you could ask for.
We’re just going to call this a major mom win! You feel me?
On Sundays, I like to be fancy. So I’ll make a fun pancake platter packed with fresh berries & nuts. This way the family can top their pancakes with some fun toppings. There’s usually a few cups of coffee and fresh juice on the side.
For the last six months, I’ve been making fresh juice with lemon, apple. celery, cucumber, carrot, ginger and turmeric root! It’s light and refreshing! Buying a juicer is my of my favorite pandemic purchases.
But back to pancakes. If I told you, you probably wouldn’t believe me. They’re packed with protein! The secret ingredient? BUB’s Naturals collagen! That’s right. I love cooking and baking with BUB’s Naturals because it’s a great way to add protein, it doesn’t give it a weird flavor or consistency!
Most folks just added collagen to their morning coffee, but not me. There are various ways to incorporate it into your day. Typically I’ll add a scoop or two to smoothies, but Protein Froyo Cups, scones and Protein Almond Butter Granola are just a few other ways I sneak in some extra protein!
You would likely be surprised if I told you these were made with wheat flour! Am I crazy? Not a chance. Ok, maybe a little. But it just added another element of nutritional benefits to the pancakes. Are you sold yet?
Blueberry Protein Pancakes
Ingredients
- 1 1/4 cups whole wheat flour
- 4 tsp baking powder
- 3/4 tsp salt
- 1 cup unsweetened almond milk
- 1/2 cup apple sauce
- 2 eggs
- 1 tsp vanilla
- 1 tbsp maple syrup
- 2 -4 scoops unflavored collagen, I like BUBS Naturals
- 3 cups blueberries
Instructions
- In a large bowl, combine the flour, baking powder, salt, and collagen. Set aside
- In a medium bowl, whisk the almond milk, apple sauce, eggs, vanilla, and maple syrup. Combine the dry and wet mixtures. Do not overmix. Otherwise, you would have fluffy pancakes. Once combine let it sit for at least 10-15 minutes to “thicken” up.
- Heat griddle or pancake pan over medium heat and spray with coconut or avocado oil. Use a 1/4 cup to pour the batter onto the griddle/pan. Drop the desired amount of blueberries on each pancake. When the pancakes start to bubble flip and cook the other side for 2 minutes or so. Transfer to a wire rack. Enjoy with your favorite topping. Prep a double batch and have them all week!
